Dryer Tunnel Oven

Overview

The tunnel dryer-oven has two distinct sections. First the furnace chamber and second the 3 pass baking chamber. In the furnace chamber, pipes are installed to move the air from an air intake opening to the cooking surface. From one side, there is a turbine that creates a vacuum effect from the air intake opening, and creating a turbo compressed propelled air to the baking chamber. On the opposite side of the furnace chamber, a flame burner heats the air pipes. The heated pipes, heat by energy transfer the air circulating inside them to inside the cooking chamber, pipes are installed on top of the first conveyor and pipes under the last conveyor. The air is evacuated from holes with very small diameter in the pipes, directing the compressed air directly on the pita bread. The furnace chamber and the baking chamber are connected by an air duct that allows the air circulation for the furnace to the baking pipes. Also, FoodMatix Solutions Group has a unique design that allows the pita chips to leave the baking area between each level, where the chips are in contact with the air, allowing a temperature change in the product, hence resulting in a better crispiness of the product.
